Coconut pancakes

INGREDIENTS:
• 1 egg
• 3 egg white
• 1/3 cup of coconut flour
• 1 teaspoon granulated sweetener
• 1 teaspoon baking powder
• 2 teaspoons grated coconut
• Coconut milk IF NECESSARY.
• Topping: grated coconut, berries or any you preferred.


PREPARATION:
• Put all the ingredients in the blender until you have a homogeneous mixture. Remember to add milk only if you see that it is very thick.
• Put in a small skillet over low heat and cook on each side.
• Serve them on a plate and add grated coconut for the topping and enjoy.
